Vegetable Bhajis

Dad was inspired by Ainsly Herriott on TV, just like the good old days! His were Trinidad bhajis, with Ocra and a hot hot sauce! We like these just fine.

1 Onion
Red and green capsicum
Carrot
Cumin
Coriander
Ginger
Dried chilli flakes
Salt and Pepper
Chickpea flour
Water
Oil
Chop onion in half then slice into thin slices. Slice the other veggies thinly and put all into a bowl.
Add all the dry ingredients and mix to coat. Add enough water to stick it all together into a stiff batter.
Mould into small balls in your hands and deep fry in a saucepan of hot oil (veggie or canola) until they are golden and crispy. Roughly 5 mins.
Serve with a hot mango chutney and yogurt mint dip.
