Celeriac Gratin (low carb)

This is so rich and delicious, I can't believe that I hadn't had celeriac more before. Even H&L liked it. It's one of those very keto friendly recipes, so very high fat.

1 celeriac about 800g
1 medium onion, peeled and sliced
3 cloves garlic, peeled and chopped
3 tbsp butter
1 cup cheddar cheese, grated
500m cream
2 tbsp parsley
Half tsp nutmeg
1tsp salt
1 tsp black pepper
Preheat oven to 200C
Peel the celeriac and cut into four. Then slice into 1cm thick slices.
Lightly grease a baking dish with 1 tbsp of the butter
Layer slices of the celeriac in the baking dish, overlapping each other.
Place half the onion and garlic over the celeriac slices
Season with salt, pepper and nutmeg
Scatter half of the cheddar cheese over the celeriac layer.
Repeat the layers.
Sprinkle parsley over the top (although we didn't in the one in the photo)
Pour the cream over the celeriac and bake for 50 minutes until golden on the top and the celeriac are soft.
Counterbalance with something fresh! A nice green salad was lovely. You could have a piece of meat too for a full on meal. A steak would be great!
