Tahini and Lemon Dressing

From the files of 'Smitten Kitchen' this dressing was part of a recipe for carrot salad with tahini and crisped chickpeas. Yum! Ever since we've used the dressing for lots of different mediterranean salads.
Whisk all the following ingredients together:
1 medium garlic clove, crushed
1/4 cup lemon juice
3 tblsp well stirred tahini
2 tblsp water, plus more if needed
2 tblsp olive oil
Salt and pepper
Taste and adjust the seasoning and add enough water to make it your desired consistency.
