Keto Cheese Sauce

I love cauliflower cheese and I'd not had it since starting keto. But this recipe from "The Keto Chef's Kitchen" has changed all that. It's delicious, but if you're not doing keto, it's a wee bit high fat!


Makes 4 portions


100g Cream Cheese

50g Butter

80ml Cream

100g Cheddar, grated

Half Tsp nutmeg

Salt & Pepper to taste


Dice the cream cheese and butter and add to a pot along with the cream.


Heat on low, whisking occasionally until the mixture is completely melted.


Add the grated cheese, nutmeg and seasoning and mix until smooth.


You can thin it out with a little extra cream but it's not needed if you're doing cauli cheese. Best used straight away.

For an amazing keto cauliflower cheese, cook your cauliflower (half a head) but not until it's too soft. Crisp up some pieces of streaky bacon (about 200g). Drain the cauli, and pop into a roasting dish. Sprinkle with the bacon and top with the cheese sauce (1 recipe from above) and a final sprinkle of grated cheese before putting in the oven for a good 15 mins or until bubbling and the top is brown.
