Caramel Sauce

Dad's go to caramel sauce, salted or otherwise. Is amazing with ice cream, great with a baked NY cheesecake and perfect with Nadia's brown sugar meringue.


Dad never measures the ingredients, but in order to create a recipe that Lottie can follow, here's what they both came up with:


Melt 100g butter in a non-stick frying pan. Add 1 cup of brown sugar whilst it's still melting and let them slowly melt and dissolve together over a low to medium heat.


Too high and you'll get toffee! When the brown sugar has totally dissolved, take off the heat and add 1/4 cup of cream, or orange juice, or a wee nip of brandy. Add salted if you do want the salted version.
