Spudulike

Growing up there was always a spudulike (spud-you-like) in York and London. Plastic tables and I seem to remember, plastic cutlery!! Our own mid-week version is so much more civilized!
A filled jacket potato is a cheap, healthy and filling dinner (or lunch).
I particularly like a baked orange kumara instead of an orinary potato. Treat it exactly the same but you don't need to cook it for as long.
Olive oil
Salt
Prick the skin of the potato with a sharp knife. Then cover it with olive oil and salt, rubbing in so that it's well and truly covered. This will make the skin lovely and crispy.
Bake at 200-220C for about an hour to an hour and a half depending on the size. Test with a sharp knife, the skin should be crispy and the inside should be completely soft.
First comes proper butter. Then you can fill it.
Fillings:
Baked beans and cheese (classic)
With crispy bacon bits (if you have to have meat!)
With sausages cooked and sliced (if you have to have more meat!)

Tuna and sweetcorn
Chilli beans
Cheese and coleslaw
Egg mayonnaise
Another version is the filled Kumara. This mexican stuffed kumara is particularly yummy, even though kumara's are slightly more expensive than ordinary potatoes.
