Pulled Beef & Bean Tacos

You can use any pulled beef either make your own (pulled firecracker brisket would be extra yum) or buy from the supermarket. Would work well with pulled pork too.
8 tortillas
1 brown onion, finely diced
1 clove garlic
15g taco spices (either purchased or use a mix of smoked paprika, black pepper, oregano, coriander, cumin, cinnamon and cocoa powder)
300g pulled beef
1 can red kidney beans
1 can chopped tomatoes
1/2 tsp sugar
To serve:
1/2 lettuce, sliced
2 carrots, grated
125g sour cream
Sweet chilli sauce
Heat a little oil in the frying pay on medium heat. Cook onion and garlic for 3-4 mins until softened. Add taco spices and cook for 30 seconds until fragrant. Add pulled beef, kidney beans, canned tomatoes and sugar. Bring to a simmer, gently break up the beef and ook for about 8 mins, until thickened and reduced. Season to taste.
Prepare lettuce and carrots.
Serve with warmed tortillas (you can do this in the oven but we use the microwave), salad, sour cream and sweet chilli sauce on the side.
If you have the pulled beef already in, then this only takes half an hour at the most to get ready. You can also mix up the salad as you like it.
