Mushrooms on Toast a la Jon

Jon does the best mushrooms on toast although it does change slightly every time depending on how he's feeling and what's in the fridge! One of my favourite lunches :-)



Usually you will need:

Some kind of bread, grainy is best, or ciabatta

Selection of mushrooms

Butter

Onion or shallot

Cream

Splash of brandy

Curly Kale

and then any add ons such as roasted tomatoes, avo, sprouts etc

Get some butter sizzling in a saucepan and add the onion or sallot. When it's soft, add the mushrooms and cook for about 5 minutes. Add the splash of brandy, and then cream to make a sauce.


Toast the bread and assemble as per the picture! Dig in..
