Mums Everyday Mayonnaise

I've been making this mayonnaise ever since we arrived in NZ and I read the recipe in my battered copy of Alison Holsts cookbook. It never fails, just might need some adjutment to taste.
In a glass jug put one egg.
Add to it:
1/2 tsp salt
1/2 tsp sugar
1 tsp dijon mustard (grainy mustard also works nicely)
1 tblsp white wine vinegar
Give that a good zuzz with the stick blender.
Then slowly (but doesn't need to be too slowly) add a flavourless oil such as canola or rice bran and keep zuzzing until the desired consistency is reached. Jon likes me to add a smidgen of olive oil to give it a bit of an olive oil flavour, but not too much otherwise it goes bitter.
Adjust the seasoning. You can add anything you like such as herbs and lemon.
