Mum's made-up stuffed peppers!

So I use couscous, not rice in mine! Take the top off of a pepper and take out the seeds and membrane. Zap in the microwave to soften very slightly.


In a bowl make the couscous with the usual oil and seasoning (chicken stock, some italian herbs etc), and when its ready, mix in some things like tomato pieces, red or spring onion, feta, and anything else that takes your fancy. Olives are good, as are sultanas or apricots.


Suff the pepper with the couscous and place on a lined baking tray. Drizzle with olive oil and bake at about 180 C for possiby 20 mins. The time will vary but it wants to look cooked, soft and with some colouring, like the photo.


Serve with green salad, lots of herbs and some extra feta.
