Ingredients
Couscous 1 ¼ Cups Couscous 2 Tbsp Olive oil Zest of 2 Lemons 1 tsp salt 1 ¼ cups boiling water 2 red, yellow or orange capsicums ¼ cup mint leaves 60g sliced, toasted, almonds Juice of 1 Lemon

Moroccan Beef Kebabs
½ cup chopped, fresh coriander ¼ cup fresh Lemon juice
2 garlic cloves, crushed 2 Tbsp olive oil 2 tsp ground coriander 2 tsp ground Cumin ½ tsp dried chilli flakes ¼ tsp Ground Cinnamon 750g beef sirloin steak, trimmed, cut into 3cm pieces Olive oil spray
Lemon Yoghurt 1 cup natural unsweetened yoghurt Juice of 1 Lemon
⅓ Cucumber cut into small pieces Salt Pepper
