Hunt for the best Veggie Burger!

I love veggie burgers, but they are not all created equal. There are a few recipes that I intend to try..


Firstly, a slightly modified Jamie Oliver recipe.

Epic Bean Burger


1 bunch spring onions, or one small brown or red onion

1 long red chilli, or small sprinkle of chilli flakes

Small bunch of fresh coriander

400g can black beans, rinsed, drained

1 tsp smoked paprika

1 cup fresh breadcrumbs

400g can chickpeas, rinsed, drained

Plain flour to dust

1 tbsp each white sesame seeds and flaxseeds, chopped


Put onion and chilli into a food processor and whiz until finely chopped. Add two-thirds of the black beans, paprika and breadcrumbs and whiz until combined. Add chickpeas and remaining black beans and pulse very briefly so the texture remains a little course.


Transfer to a bowl and place flour in a separate bowl. Divide beach mixture into six balls then lightly dust each in flour, shaking off excess. Flatten into 2cm thick patties. Sprinkle over sesame and flaxseed, lightly pressing into patties.


Heat oil in a flying pan over a medium heat. In batches cook the patties for 4-5 mins each side or until lightly charred and cooked through. Keep warm in the oven while you cook the rest. They will sit happily in the oven.



Verdict: Really lovely flavour, and if you don't pulse it too much then it still has a good texture. It just got a bit soft when hot. I forgot to use the flour at the end!
