Hollandaise Sauce

Dad's best recipe for eggs benedict! Stolen from Alison Holst.


2 egg yolks

1 tblsp lemon juice

100g butter


Place egg yolks and lemon juice in a bowl (one of our silver ones) put on top of a saucepan of boiling water to gently warm. Make sure it doesnt get too hot.


Melt the butter in a jug in the microwave. Slowly pour the melted butter into the eggs and lemon mixture, mixing all the time until smooth and glossy.


It's difficult to make hollandaise look attractive in a photo, but this one was taken on Easter Sunday 2020, during lockdown. Under the sauce are two poached eggs, accompanied by crispy bacon. Yum!
