Healthy Caesar Dressing

This is from an Australian Womans Weekly book on sugar free cooking which has become a bit of a go-to because I love sauces so much. A yumy healthy alternative is always good.
In a small food processor (I suppose you could use a stick blender too) put the following:
1 cup yogurt (I always use greek)
2 tblsp olive oil
2 tblsp grated parmesan
4 finely chopped anchovies
1/2 clove garlic, crushed
1 tblsp lemon juice
3 tsp dijon mustard
Blend until smooth and season to taste.
Will sit happily in a sealed jar in the fridge for up to 1 week.
