Falafels

I love falafels, in wraps, kebas, on salads, anywhere and its one of those recipes that you can tweak and change dependent on what herbs you've got to hand, how spicy you want them etc. But this recipe is a good starting point.
Put the following into a food processor:
1 can of drained chickpeas
1 clove garlic
1 small red onion (or a chunk of a large one!)
1 tbsp tomato paste
1 tsp smoked paprika
1 tsp cumin
Handful of parsley
One and a half tbsp chickpea flour
Give it all a good zuzz until it starts to come together. I then add one tablespoon of tahini to help bind it and make it yummy.
I use a quarter cup to measure the mix and then mould it into shape. Fry in a little olive oil in a non stick frying pan and if you need to keep them in the oven to keep warm.
Great with feta and tzatsiki...
