For chilli con carne or nachos, this is a go-to recipe! Yum!

1 decent sized onion, finely chopped

1 really good heaped teaspoon of cumin powder

Half to three quarters of a teaspoon of cinnamon powder

A pinch of dried chilli flakes to taste (make it good sized if you like it with a kick!)

500-600g good quality minced beef

1 tin chopped tomatoes

1 tin red kidney beans

1 tsp beef stock / boiling water

1 really good heaped teaspoon of cocoa powder

Salt and pepper

Heat about two tablespoon of oil in a frying pan.

Fry onion until soft and then add the cumin, cinnamon powder and chilli flakes and fry for a couple of minutes until fragrant.

Add the beef mince and break up as it cooks. When it's brown add the tomatoes, kidney beans, beef stock and cocoa powder and mix. Add some water to allow the mince to simmer for 15 to 20 mins until thick and yummy. Check seasoning and add salt and pepper to taste.

Serve with either rice for chilli con carne, or tortilla crisps for nachos, but always serve with sour cream, avocado, grated cheese, fresh chopped tomato and coriander!
