Chicken Satay Skewers

Another simple mid-week meal, or good for a Saturday night.

600g chicken breast, cut into 2cm cubes
Banboo Skewers (this quantity makes about 10 medium sized skewers)
Marinade
A couple of good drizzles of oil
Cut the chicken into cubes and pop into a marinade of your choice. I use soy sauce, a drizzle of sesame oil, garlic and ginger, but you could use any asian style marinade. Lemongrass, fish sauce etc would make it more Thai style. Let it marinate for as long a you can.
Thread onto skewers. Heat the oil in a non-stick frying pan, and cook the skewers in a couple of batches. Keep the first batch warm in the oven while you cook the rest.
Serve the skewars on top of a bed of rice with satay sauce drizzled over the top and veggies on the side. Put the extra sauce in a small bowl on the table. Yum!
