Chicken stuffed with cream cheese & spinach (KF)

Quick and delicious. We used one chicken breast per person. Slice in half horizontally and bash to flatten to within an inch of it's life. The half breast needs to be thin and even.
Spread the flattened chicken with cream cheese and cover with some ever so slightly wilted spinach. Season well with salt and pepper before rolling up tightly. You can roll any which way you like, but these were done on the long edge.
Once rolled, wrap tightly in bacon and if you need to, secure by stabbing with a toothpick.
Sear in a pan on the stove top, in a drizzle of olive oil, and then finish in the oven at 180-200C. Timings will differ dependent on how thin the chicken was bashed and the size of the breasts. Cut one after about 20 mins to check on progress..
Serve it with anything you like... it goes with so many things.
