Warm Salsa (Que?)

This sounds a bit odd but it was really tasty served with some spicy mexican beef strips stir fried and jasmine rice.
1 red onion, finely diced
1 capsicum, diced
2 tomatoes, diced
75g baby spinach, chopped
1 drizzle oil
250g frozen corn, or tinned
Smokey mexican spices (mix of cumin, coriander, smoked paprika, oregano, chilli powder or a good pinch of chilli flakes, garlic powder and veggie stock powder)
2 tsp vinegar
salt and pepper
Heat oil in a large fry-pan on high heat. Cook onion, capsicum and cord with some smokey mexican spices for about 6 minutes until browned. Transfer to a medium bowl with the tomato, spinach, and vinegar. Mix to combine and season to taste with salt and pepper.
