Anchovy peas

I can't believe I hadn't put these on here before now. These have been around in the Ward household for so long I can't remember where it originally came from. Possibly Nigella as she is somewhat obsessed with anchovies!
It's just a good way to turn a very cheap, but versatile frozen pea, into a side dish that's a bit more interesting. And even those who don't like anchovies, like this. There's nothing fishy about them, the anchovy fillets just give it a real depth of flavour.
Just take a non-stick fry pan and put a good glug of olive oil and a knob of butter in it and turn the heat to medium. Wait till the butter melts.

Put in about 3 - 4 anchovy fillets and slightly mush up in the now sizzling butter and oil. when it's nicely broken up, add the peas. Give them a good stir and allow them to braise in the oil and butter. If it looks like they're sizzling too much, turn it down. It's just a gentle cook.
When the peas are cooked through and they taste unctuous, they're ready. They will also deepen in colour.

Yum!
