Veggie Rice

You really could use a mix of veggies but this is a simple one..


Rice


1 1/2 cups jasmine rice

2 1/4 cups boiling water

1 broccoli, chopped

1 drizzle of oil

250g frozen peas

1/4 cup chicken stock

1/2 pack baby spinach


Cook the rice in the chicken stock.


Halfway through the cooking time, add the chopped broccoli and frozen peas.


When cooked, drain the rice, stir through the baby spinach (and a bit of butter, because everything tastes better with butter), and season with salt and pepper.


Sweetcorn always goes well in this.
