Ultimate Butter Chicken

Lotties favourite type of curry, she is a bit of a guru when we go out and will always give marks out of 10. This one, whilst good, still needs some more time in the test kitchen!!!

2 good sized chicken breasts, diced 2cm
Butter chicken spices (Chilli powder, ground turmeric, ground cinnamon)
Pinch of chilli flakes
1 tsp salt
2.5 tbsp butter
1 brown onion, chopped
1 clove garlic, minced
1 cup cream
1/2 cup milk
140g tomato paste
1/2 tsp vinegar
1 tsp sweet chilli sauce
Pat chicken dry and dice 2cm. Place chicken in a bowl with butter chicken spices, chilli flakes and salt. Mix to combine and season with pepper.
Heat butter in a fry-pan on medium heat. Cook onion for 4-5 mins, until soft, then add garlic and cook for a further min. Add chicken and cook for 3-5 mins until golden brown and nearly cooked through.
Add cream, milk, tomato paste, vinegar and sweet chilli sauce to pan. Bring to a simmer, reduce heat to low-medium and simmer for about 5 mins, until chicken is cooked through and sauce has thickened slightly. Season to taste.
Serve with rice and yummy accompanyments like naan bread, raita, mango chutney etc.
