Classic pikelet recipe. Waiting for Lottie to take some photos next time she makes them!

1 large tbsp golden syrup
25g butter
1 tbsp sugar
1/2 cup milk
1 large egg
1 cup self-raising flour
Measure the syrup into a microwavable, large bowl (our white one) using a hot spoon is easiest. Add the butter, warm to soften both, then mix in the sugar, milk and egg.
Sprinkle flour the top, then mix briefly with a whisk or beater just until smooth.
Drop 1-2 tbsp of mixture into a hot frying pan with butter. As soon as you see bubbles begin to burst on the surface, turn them over. When the centres of the secondd side spring back when touched, the pikelets are ready. Cook in batches until all the batter is used.
Serve with lots of yummy things on top such as maple syrup, nutella or strawberry jam.
