90 Second Keto Bread

Latest discovery since starting keto and a really good go-to.


Ingredients:

1/3 cup almond flour (or almond meal, or ground almonds that's been zuzzed to make it finer. I use ground almonds most of the time)

1 egg

Half tsp baking powder

1 tbsp melted butter

Smallest pinch of salt


Put all the ingredients into a microwavable bowl and mix. Microwave for 90 seconds. What you've got is a yellowy spongy thing! Tip out of the bowl, let it cool for a moment and then slice in half. You can either pop the two slices into the toaster, or you can heat them in a frying pan with some butter (delicious).


Collection of keto bread uses:


Plain with sour cream, capers and smoked salmon.


Cinnamon version, leave out the salt and replace with half a tsp of monkfruit sugar, add half a tsp of cinnamon and half a teaspoon mixed spice. Then definitely heat in the pan with butter once it's cooked. I've been serving it with Greek yogurt and blueberries for breakfast. Yum!


Plain with marmite, tomato and grilled cheese!


Plain, drizzled with butter, dollop of Greek yogurt, toasted hemp seeds and a large drizzle of sugar free maple syrup.


Jon has even used the bread as a cobbler-style topping for a chicken fricassee. Just delicious as it soaks up some of the chicken sauce but stays crunchy on the top. It would be good too on top of a beef casserole, with a generous covering of a strong/mature cheddar grilled on top...



A BLAT! In the bread is about a third of a cup of grated parmesan and Italian herbs.

It's tradition in our house to have almond croissants for breakfast and this year (2025) I didn't want to miss out, so I made a keto frangipane, using allulose instead of sugar and it was delicious....
