Pancakes

Dad's the pancake guru in the house and he's always used the same Alison Holst recipe:
3/4 cup plain flour
2 tbsp sugar
1/2 tsp salt
1/2 tsp baking soda
1 egg
1 cup buttermilk (or milk)
50g butter, melted
Put the first four dry ingredients into a large bowl and use a fork to mix thoroughly.
Whilsk together the egg and milk. Melt the butter (we do it in a jug in the micowave). Then mix box of the wet things into the dry and whisk until there are no lumps.
Heat butter in a non-stick frying pan and when hot pour or ladle in the mix until the pancake is the size you want it. Flip it to cook on both sides when the first one is golden brown.
We have some fairly traditional ways of serving them:
- with sugar and lemon
- with nutella and banana
- with bacon, banana and maple syrup
