Our Tumeric Roti

Simple and tasty to go with any curry and a change from the yogurt flatbreads in this section.
2 cups plain flour
1 tsp salt
1/2 tsp turmeric
Cumin seeds, toasted
Drizzle of olive oil (count 8 seconds!)
Water to bind
Put the flour, salt, cumin seeds and turmeric into a large bowl and mix with a fork. Drizzle the olive oil in and mix again so that it's spread throughout the flour. Then add enough water to make a pliable dough.
Knead for a few minutes and then divide into 8 equal portions. Roll out on a lightly floured bench until they are the desired size and shape, but they are best when they are thinner.
Heat a non-stick fry pan on high heat, and dry fry roti for a few minutes on each side until brown. No need for any oil or butter.
If you need to you can wrap them in tin foil and put them in the oven until the curry is cooked.
