Lottie's school time breakfast bars

(well, Annabel Langbein's really....!)




Ingredients


1.5 cups pitted dates finely chopped

1/4 cup honey

2 tbsp water

1 tsp vanilla extract

1/4 cup butter or coconut oil

3 cups rice bubbles (or quinoa puffs, but Lottie uses rice bubbles)

1/2 cup desiccated coconut

Combine dates, honey, water and vanilla extract in a medium pot, bring to a boil then stir over heat for 3 mins until pasty. Add butter or coconut oil or butter and stir to melt.


Remove from the heat and stir in the cereal and coconut. Mix well to evenly combinethen press into a 26cm x 20cm tin. When cool, cut into bars. Store in a sealed container in the fridge for upto two weeks.


Lottie likes to drizzle hers with good quality dark chocolate before cutting. Great for wrapping up and taking to school when you can't face eating first thing!!
