Go-to crispy new potatoes

Inspired by a Jamie Oliver recipe, we do these potatoes alot because they can be made ahead, sit well and have a lovely combination of being fluffy, tasty new potatoes with a crunchy top.
Take some small new potatoes and half any slightly bigger ones. Put in a large pot of water with a good helping of salt and boil until just done. Drain well and put into a shallow serving dish. With a fork, slightly crush the tops of the potatoes so that there's a rough edge to all of them on the top (or if its just a single layer, then smoosh all of them).
Season with salt and pepper and drizzle with olive oil. As an option, finely dice an onion and fry until brown. Scatter those over the top too before placing under a grill to brown.
If you make these ahead, then do everything up until the olive oil and let sit in the serving dish. When you're ready, sprinkle over the olive oil before warming in an oven and finishing under the grill.
In the photo below, we didn't do the onion but we did sprinkle with fresh thyme before grilling. I forgot to take a photo after they'd been finished off!! Next time..
