Fattoush Salad

This is a really lovely fresh salad and great served at a bbq alongside anything that is vaguely middle eastern.
Mix together in a large sald bowl:
Baby Cos Lettuce
Tomatoes, cut into wedges
Red Capsicum, diced
Lebanese Cucumber, sliced
Parsley leaves
Squeeze of lemon juice
Splash of olive oil
Crisp Lebanese bread chips (see below) and toss.
Serve sprinkled with sumac.
Lebanese Crisp Bread chips
Preheat oven to 180C. Spray Lebanese bread with olive oil and sprinkle with sesame seeds and sumac. Place on an oven shelf and cook for about 5-7 mins or until crisp. These can be made up to two days ahead. Break into large pieces for a serving platter and smaller pieces to stir through the salad.
