Fast Fijian Fish Curry

Courtesy of New World! Yummy but simple so good for during the week.


2 tblsp oil

1 large onion

4 cloves garlic

1 tblsp grated fresh ginger

1 chilli (red)

2 tsp cardomom

2 tsp curry powder

2 tsp cumin

2 tsp tumeric

1 tblsp garam masala

400g tin coconut cream

400g tin chopped tomatoes

800g white firm fish (cut into 3cm cubes)


Heat oil in a pan and cook onion until soft.


Add garlic, ginger, chilli and spices. Season with salt and cook until fragrant.


Stir in coconut cream and tomatoes. Bring to the boil and then add the fish and simmer for approx 4-5 minutes until the fish is cooked through - don't overcook!


Serve with rice, coriander, mint leaves and a lime cheek.
