Dad's Chicken Curry

One of our '5 meals, 1 chicken' recipes!
1 brown onion
2 garlic cloves, crushed
Chicken thigh meat, cubed, enough for four portions (we often used two thighs, plus a little of the breast meat)
1 tsp each of Cumin, Tumeric, Coriander, Ginger and Mild Curry Powder (bit of chilli powder or flakes for some heat)
Tin of chopped tomatoes
A handful of sultanas and dessicated coconut
3 tsp of brown sugar, or to taste
Salt and Pepper to taste
Soften onions and garlic in olive oil.
Add chicken and fry until sealed
Add all spices and cook for a couple of minutes
Add the brown sugar, tomatoes and half a tin of water and simmer for a few minutes
Add sultanas and coconut
(if you were using cold cooked chicken instead of raw meat, you would add it now and heat through thoroughly in the sauce)
Season to taste
Serve with rice and all the usual accompanyments:
Sultanas
Toasted coconut
Slice bananas (bit retro but yum!)
Finely diced red onion
Raita
Mango chutney
Lime pickle
As a low carb alternative to rice, serve with plain cauliflower rice or cauliflower pilaf.
