Coconut macaroons (KF)

A very simple but delicious sweet treat which does enough to satisfy the 3pm craving at work.


2 cups unsweetened shredded coconut

Half a cup of powdered keto-friendly sweetener

2 large egg whites

Half teaspoon vanilla extract

Quarter teaspoon almond extract (optional)

Pinch of salt


Makes 12 servings. At 4 carbs each, they're not the lowest carb rated treat out there, but they're very yummy and one is enough.


Preheat the oven to 160C.


In a bowl combine the coconut and sweetener and stir until well mixed.


Whisk the egg whites until they form stiff peaks and then gently fold into the coconut mix so that you retain as much air as possible. Add the extracts and salt and mix again.


Use a spoon or a cookie scoop to drop mounds of the mix onto a lined baking tray and bake for 15 - 20 mins until they're golden brown on the outside. Cool for a while on the tray before transferring them onto a cooling rack.
