Christmas Salad

We've used this salad on a few of our christmas menus. It's really a tomato, green bean, ricotta and basil salad with balsamic glaze, but we call it Christmas salad because it's Christmas colours.


400g green beans

2 x punnets cherry tomatoes

200g fresh ricotta

Large handful basil leaves

Flaky sea salt

Extra virgin olive oil

Balsamic glaze (store bought or homemade)

Blanch the beans quickly in boiling water for 3 mins. Refresh in cold water and drain well before putting into a large salad bowl.


Chop the cherry tomatoes in half and add. Strip lots of basil leaves from whatever plant you have and add too. Mix well then dot ricotta over the top and drizzle with balsamic glaze.
