Chicken, roast veggies & cous cous

You can make any meal up when you've got couscous that you can add things to, a variety of roast veggies lurking in the bottom of the fridge (beetroot, onion wedges, carrot, capsicum all work well), and some chicken that you can marinate for even a brief time before you cook it.
I try and theme up the flavours and spices throughout each component, so if the theme is mediterranean, then I'll roast the veggies with rosemary, garlic and oregano, use the same fresh herbs through the couscous and use lemon and garlic marinade for the chicken. Stir through small mozarella balls, fresh cherry tomatoes and basil. You could go middle eastern, using sumac, z'atar and cinnamon/cumin and stir feta, apricots and almonds through it.
