Chicken Casserole

Another one of our '5 meals, 1 chicken' dishes.


This is kind of french style, but it is quite free-style in that you can change out veggeies, beans and herbs to suit what you have.


Start by putting some olive oil (about two tablespoons or a good glug) to heat in a saucepan and add one chopped onion and a couple of cloves of garlic.


Saute until transparent, then add the chicken (and if you wanted to throw in a stray sliced sausage or chorizo), frying until no longer pink and then add:


1 can chopped tomatoes

1 can beans (mixed, cannelini, pinto etc)

Mixed herbs

2 bayleaves

A couple of sprigs of thyme


Transfer to the oven to finish cooking - approx 45 mins.


Season well with salt and pepper. Sometimes a wee bit of sugar too.

Serve with any kind of mash and greens.


Cauliflower mash is great with it.
