Cheesy Tater Salad

We really enjoyed this version of potato salad, but Harry and Lottie didn't like the orange segments! You could easily leave them out.

800g potatoes, diced 2cm (although we left them a bit bigger)
1 tsp smoked paprika
1 capsicum, thinly sliced
1 orange, diced 1 cm
75g baby spinach
125g cheese, grated
125g sour cream
2 tbsp mayo
1 tsp mustard
Heat the oven to 220C.
Toss potatoes on a lined oven tray with the paprika and a little oil. Season with salt and pepper and roast for 25-30 mins, until golden and tender. Set aside to cool slightly.
In a large bowl, mix all the dressing ingredients together. Add capsicum, orange and spinach to dressing and toss to combine.
Add the cooked potatoes to the bowl, mix gently to combine and season to taste.
