25 grams butter, chilled and diced
125 grams Cheddar or Edam cheese, grated
125 grams flour
1 teaspoon curry powder, optional
toppings: sesame seeds, poppy seeds, finely chopped nuts of your choice
Preheat the oven to 200ºC. Line 1-2 trays with baking paper.
Put the butter, cheese, flour and curry powder, if using, into a food processor and process until the mixture forms a stiff ball of dough.
Turn out onto a lightly floured bench and roll the dough out to ½cm thickness.
Cut into 4-5cm rounds or your preferred shapes.
Place on the prepared trays and sprinkle with one of the selected toppings.
Bake in the preheated oven for 12-15 minutes or until golden and crisp.
Cool 1 minute before transferring carefully onto a cake rack to cool completely.
Store in an airtight container. Freeze when cold, if wished.
