Chocolate Brownies

This was our chocolate brownie recipe given to us by a chef at Villaggios and we've used it ever since. Not approved by weight watchers!


1.5 cups caster sugar

3/4 cup cocoa

1/3 cup plain flour

1/2 tsp baking powder

1/2 tsp salt

4 eggs

1 tsp vanilla essence

250g butter

120g dark choc (chunks or buttons)

100g white choc (chunks or buttons)



Preheat the oven to 180C.


Place all of the dry ingredients into a large bowl.


Whisk together the eggs and vanilla essence in another bowl.


In a jug, melt the butter and then whisk into the egg and vanilla mix. Pour all of this into the dry ingredients along with the two types of chocolate and mix until well combined.


Pour into a greased 20 x 30 cm lined brownie tin and bake for 30 mins or until baked but with still a wobble on. It's the wobble that makes it gooey and fudgy rather than cakey.
