Turkish Flatbread Pizza with Spicy Mince

Adapted from an Annabel Langbein recipe this can be as spicy as you like. I'd like to try an Indian version of this too and replace the hummus with minted yogurt and a spicy lamb keema on top. Watch this space! You could also do smaller versions of this for nibbles as the dough is so easy to make and use. Although the list looks long it is really simple to do and the mince and hummus can be made in advance.
Pizza Base

2 Cups self-raising flour
1 tsp salt
1 cup natural greek yogurt
1/2 cup extra virgin olive oil
Spicy Mince
1-2 tbsp olive oil
600g lamb mince
2 fat cloves of garlic, crushed
1 large onion, finely chopped
2 tsp ground cinnamon
2 tsp ground allspice
large pinch of chilli flakes
1 tsp salt
ground black pepper to taste
(the original recipe mixed in 2-3 tbsp pomegrante molasses or balsamic glaze but we haven't used it yet...next time)
Garnish
4 radishes, very thinly sliced
1 spring onion
1/2 cup coarsley chopped flat-leaf parsley
To serve
1 cup hummus
1/4 cup toasted almond slivers or pine nuts
1/2 cup natural greek yogurt thinned with 2 tbsp lemon juice
To make the pizza base put the flour and salt in a large bowl and then add the yoghurt and oil and mix well. It forms a very soft dough. Divide into 4 and using floured hands, press each piece out into an oval about 20cm x 15cm on baking paper lined oven trays.
When you're ready to cook them, preheat oven to 200C fanbake. Bake pizzas until risen and golden underneath, about 15 minutes.
While the pizza bases are cooking, make the spicy mince. As mentioned, you can easily make the spicy mince another day and keep it in the fridge or freeze it.

Heat the oil in a heavy based non-stick fry pan. Add the mince, garlic, onion, spices, salt and pepper and cook over a high heat, breaking up the mince with the back of a spoon, until browned, about 10 mins. Remove rom the heat and if using, stir in the pomegranate molasses or balsamic glaze.
For the salad garnish, combine the ingredients in a small bowl and set aside.
Remove pizza bases from oven. Spread 1/4 cup hummus over each base, then divide spicy mince between them. Top each with a handful of salad garnish. Sprinkle with almonds or pine nuts and drizzle yoghurt over the top. Yum!
We seve it with a salad on the side too for plenty of freshness. Fresh tomatoes go well with it.
Note: make sure you assemble quickly after bringing the pizza bases out of the oven and have the mince nice and hot so that it's hot when it gets to the table.
