Simple Small Sponge Cakes

This is a really simple small cake recipe. You could change the flavours, but this one is orange.
2 eggs (size 7)
Weight of the 2 eggs in butter, sugar and flour
Rind and juice of 1 orange
3/4 tsp baking powder
You could glaze them with:
3/4 cup icing sugar
Zest of half an orange
Preheat the oven to 200C. And line a muffin pan with cases. The number of small cakes that you'll get depends on the weight of your eggs, but usually its about 10.
Weigh the eggs and measure out the same amount in butter, sugar and flour.
Whisk the eggs until frothy. In another bowl, cream the butter, sugar and orange zest until light in colour. Add the beaten eggs.
Sift flour with baking powder and add to the creamed mixture alternatively with half the orange juice. Reserve the rest of the juice for the glaze.
Spoon the mixture into the paper cases. Bake for 12-14 mins or until the cakses spring back when touched.
