Nana's Boil in the Saucepan Fruitcake

I grew up with this cake. It's unique, light in colour and just yummy. The measures here are from England and so it's not a NZ cup measure as we know it. Mum would just use the same size mug every time and it always came out ok. A bit of trial and error needed.


1/4 lb butter

1 cup sugar

1.5 cups sultanas, cherries, ginger, nuts etc

1 cup milk

Bring to the boil in a large saucepan, stirring occassionally.


Take off the heat and allow to cool (usually about half an hour)


Then add one egg and 2 cups self-raising flour. Pour into a loaf tin.


Bake at 125C for 2hrs.
