Kumara & Bacon Soup

Harry's ultimate soup! Very simple to make and very tasty,

It's quite hard to write this recipe because I never measure the amounts!


Chop up one good sized onion and put into a deep saucepan with a good glug of oil. Fry until the onion is soft, not browned. At some point during the cooking of the onion, add a few slices of streaky bacon which has been chopped up into pieces. Have at least 3 more waiting to be fried separately into nice cripy bits of bacon that can be sprinkled on top when the soup is finished.


Add orange kumara (two or three large ones) that have been chopped, and potatoes (use a ration of one third potatoes to two thirds kumara). Give it a good stir for a couple of minutes and then add enough chicken stock to cover the veggies. Bring to the boil and then turn down to a simmer until the potatoes and kumara are cooked through.


Zuzz up, using a stick blender until the soup is lovely and creamy and all the lumps have gone. If it's too thick, I use milk to loosen it. Check the seasoning. It always needs salt and plenty of black pepper.


Serve with a dolop of sour cream, and sprinkled with crispy bacon bits.



Last time we did it, we served it with the soft yogurt flatbreads which had been brushed with thyme butter.
