Kasundi Lamb Kofta

A quick but really tasy kofta recipe. A bit different from the greek kofta recipe that we use but this is really tasty.

Kofta

1 apple, grated

1/2 red onion, finely diced

600g lamb mince

1/2 tsp salt

2 tbsp tomato sauce

Kofta spices - mild curry powder, mustard powder, garlic powder, onion powder, dried parsley


Kasundi

1 capsicum, diced 1 cm

1/2 red onion, finely diced

A drizzle of oil

Kasundi spices - mustard seeds, coriander, cumin, tueric, garlic powder, onion powder

1 can chopped tomatoes

1/2 cup beef stock

1tsp brown sugar (or to taste)


Couscous

1 cup couscous

Couscous seasoning - chicken stock powder, mustard powder

1/4 tsp salt

1 cup boiling water


Natural yogurt to serve (and I made them have salad on the side too!!)

Prepare the kofta first. Put all the Kofta ingredients into a large bowl and combine. The best way to do this is to get stuck in with your hands (make sure to wash them well first!!).


Scoop out the mix using a tablespoon measure onto a lined oven tray. Grill for about 15 mins until cooked through. We turned them over half way through cooking.


While the Koftas are cooking, get the kasundi on the go. Heat some oil in a non-stick frypan and cook capsicum and onion for about 3 mins, until soft. Add the kasundi spices and cook for a further minute, until fragrant. Add the tomatoes, stock and sugar, bring to a simmer and reduce to medium heat to cook for about 5 mins until thickened.


While that's simmering, cook the couscous by putting all the couscous ingredients in a bowl and covering with clingfilm (or a lid) before leaving for 5 mins. Fluff up with a fork.


Serve the couscous, topped with kofta, kasumdi and yogurt.
