Homemade Marzipan

This is the Alison Holst recipe that we've always used. You just can't get proper marzipan in NZ!
100g ground almonds
1 cup icing sugar
1/2 cup castor sugar
1 egg yolk
1 tbsp lemon juice, strained (plus a drizzle)
1 cap full of almond essence (plus a drizzle)

Combine the ground almonds and sugars in a mixing bowl. Mis the egg yolk with the 1 tbsp of lemon juice and the almond essence in a cup and mix.
Add the eggy mix to the dry stuff and combine. Add a drizzle of lemon juice and almond essence to get it to a paste and tasting just how you like it.
Make sure not to use too much lemon juice as this can overpower the classic almond flavour.
