Everyday Bacon and Tomato Pasta

A regular feature on our weekly dinner table, this is a low cost meal that is really tasty with just a green salad on the side. You can add other things to it, such as black olives or bump up the veggies, but basic is good too. Use pasta shapes or spaghetti.


1/4 cup olive oil*

1 brown onion, finely chopped

2 cloves of garlic, minced

6 rashers of streaky bacon, chopped, but not too small

Italian herbs (dried) or just oregano

1 tin chopped tomatoes (or a tin of cherry tomatoes)

2 heaped dessert spoons tomato paste

Balsamic vinegar

Salt and Pepper

Sprinkle of sugar

Pasta of your choice (100g per person)

Get a large pan of salted water on to bring to the boil.


Heat the olive oil in a frying pan and fry the onion until soft, then add the garlic and bacon and cook until the onion and bacon has some colour and smells yummy.


Add in the tin of tomatoes, tomato paste, herbs a generous shake of balsamic vinegar, salt, pepper and sugar and allow to simmer gently while you cook the pasta.


Cook the pasta according to packet instructions. Before mixing the pasta with the sauce, check the sauce for seasoning. Mix well and garnish with green - fresh basil leaves are lovely.


Serve with a salad and parmesan cheese (or ordinary cheese if you're Harry!)


*it seems alot of olive oil but it really makes the difference in the flavour and unciousness of the tomato pasta in the end
