Crumble

Alison Holsts recipe for fruit crumble mix which we've used ever since we came to NZ and featured on the menu at Vilaggios with seasonal fruit (mainly feijoas!!) served in a tea cup.
3/4 cup rolled oats
1/2 cup sugar (split 1/4 brown and 1/4 white)
1/2 cup plain flour
1 tsp cinnamon (or mixed spice if you don't have cinammon)
75g v cold butter
Mix all the dry ingredients together well in a large bowl.

Grate butter into the mix and use fingers to make sure that the butter is well mixed in to the dry stuff. You can mix in a food processor just don't overmix.
Place your fruit of choice into a serving receptical, invdividual or one big one. We often use tea cups that are robust enough to go into the oven. Sprinkle the fruit with sugar if it is generally tart, then top with plenty of crumble mix.

Bake in a 190C oven for up to 45 mins, depending on the size of your crumbles, but there should have been enough time for the fruit to cook and the crumble to be golden and crispy.
Best served with ice cream or cream, but for a slightly healthier option, greek yogurt and honey as pictured below.
