Lotties go-to recipe courtesy of Chelsea sugar.


125g butter

1/2 cup brown sugar

1/4 - 1/2 cup caster sugar (recipe says half a cup, however Lottie has experimented with quarter of a cup to cut down on the sugar and it still tastes good)

1/2 tsp vanilla essence

1 egg

1.5 cups self raising flour

1/2 tsp salt


Varieties:

For chocolate chip cookies add half a cup of chocolate chips/drops or chunks

For peanut butter cookies add 1/3 cup crunchy peanut butter

Or to leave as vanilla cookies, add nothing!!

Preheat the oven to 180C and prepare two baking trays with baking paper.


Beat the butter with the sugars until pale and creamy. Add egg and mix well.


Sift flour and salt into the bowl and mix until combined. Then add choc chips or peanut butter as desired!


Use a tablespoon measure to get even amounts onto the trays and put into the pre-heated oven. Cook for 12 mins or until golden brown.
