Cheesy Crumbed Pasta Bake

From Nadia's baragain box. This was very tasty with the topping a real hit. I would use this topping for other pasta bakes.



400g pasta

500-600g lamb mince

2 carrots, grated

2 cloves garlic, minced

Tblsp of italian herbs (or more to taste)

1 400g tin tomato passata

1/2 cup beef stock

1 tsp sugar

1 tsp salt

1 tsp balsamic vinegar


For the crumb:

1 courgette grated

Approx 250g garted cheese

3/4 cup breadcrumbs

Before you start, preheat the oven to high grill. Set aside a large baking dish (about 22cm x 28cm). Bring a pot of salted water to the boil.


Cook the pasta in the boiling water for 10-12 mins until just tender. Drain and drizzle with a little oil to prevent sticking.


Heat a little oil in the a fry-pan on high heat and cook lamb for about 5 mins. Add carrots, garlic and italian herbs and cook for a further 3 mins, until carrots are soft and lamb is browned.


Add passata, stock, sugar, salt and balsamic vinegar. Bring to a boil....
