Best Shortbread Ever!

I will never use another shortbread recipe! We've used this recipe with all our desserts and have added a whole range of flavours from fruity, to lavender (in the picture above), to thyme. Christmas shortbread just needs some mixed spice and cinnamon.


6oz flour

6oz butter

2oz cornflour

2oz icing sugar

Preheat the oven to 150C.


Put all the ingredients into a food processor and zuzz until it comes together in a ball. It's that simple!


Roll out either into one large round (scoring into triangles and prick with a fork) or cut into shapes.


Bake for 20 mins.

For a gluten free version, just replace the flour with cornflour. It changes the texture slightly but it's still a really lovely buttery shortbread.
