Heather's Best Banana Cake

This recipe was given to me by Heather at Living Springs as her no fail banana cake, and she was right. We've made this cake ever since. The photo above was cooked in the square tin, which doesn't rise the same as in the round one, but we find easier to cut into wedges for lunch boxes. :-)


125g butter, softened

3/4 cup sugar

2 eggs

2 large ripe bananas

1/2 tsp baking soda

2 Tbsp boiling milk

1 1/4 cup self-raising flour

Icing (optional)

2 Tbsp cocoa

2 Tbsp boiling water

50g butter

1 cup icing sugar

Preheat oven to 150C.


Prepare your baking tin, either round (21cm) or square (20cm), by lining with greaseproof paper.

  1. Beat butter and sugar together until light and a bit fluffy

  2. Add eggs and stir in mashed bananas.

  3. Dissolve the baking soda in boiling milk (blast the milk for 30 seconds in the microwave in a tea cup, then add the milk so its frothy) and stir in

  4. Fold in the flour.

  5. Bake for 40-45 minutes

Icing (we don't do this very often but it does finish the cake nicely)

  1. Mix all ingredients together

  2. Spread across the top of the cake once cooled.
